Ingredients:
- 1 sweet potato
- 1 red bell pepper
- 1 yellow bell pepper
- lime juice
- 1/4 cup feta cheese
Directions:
- Preheat over to 450 degrees.
- Peel and dice the sweet potato.
- Toss diced sweet potatoes on a baking sheet with a drizzle of olive oil and a pinch of salt and pepper.
- Place in the oven for about 25 minutes, tossing halfway through.
- Core, seed, and dice the bell peppers into one inch cube.
- With 15 minutes left to go on the sweet potatoes, toss the bell peppers on the baking sheet.
- Roast another 15 minutes, under tender.
- In a medium bowl, toss the sweet potatoes, bell peppers, feta, and a squeeze of lime juice.
